Lemon and salt on chopping boards

A scrub can freshen wood, but it is not how food-safety agencies say to clean boards.

Evidence: Food-safety guidance does not list it as a sanitiserImportant limitationProfessional review not claimed

What the sources say

The USDA Food Safety and Inspection Service says either wood or non-porous boards may be used and gives washing and sanitising guidance. It does not name lemon and salt as a way to sanitise after raw meat or poultry.

Evidence assessment: Food-safety guidance does not list it as a sanitiser. This describes the scope of the guidance we checked, not proof that the remedy works for you.

Cautions

  • After raw meat, poultry or seafood, follow food-safety washing and sanitising guidance rather than relying on lemon and salt.
  • Replace boards with deep grooves that are hard to clean.

No method is given for this entry. The guidance we checked discourages this use or shows it does not do what tradition claims.
